鹹菜廚房 Ep.3 |烘焙也能輕鬆做,撩菜神器!德式乳酪塔

肺炎防疫期間,鹹菜依然窩在家耍廢,這次來教大家試做看看當初剛認識老菜烤給他吃的德式乳酪塔吧!

德式乳酪塔,德文稱作:Käsekuchen,外貌類似亞洲人吃的蛋塔,但內餡其實是乳酪的成份,而德式點心在蛋糕或塔皮部分,喜歡加入堅果粉末或乾燥的蛋糕粉末來增添風味。道地的乳酪是採用Quark cheese白色軟質乳酪,不過在臺灣通常會改用比較容易買到的奶油乳酪(Cream cheese)來製作,也分享給大家!

德式乳酪塔製作材料說明:

>塔皮部分:
低筋麵粉 200g
糖粉60g
無鹽奶油80g
帕瑪森起司粉 (市售起司粉可取代) 2大匙
蛋黃4顆
鹽1/2茶匙。

>內餡部分:
奶油乳酪(Cream Cheese) 90g
鮮奶90g
細砂糖或特砂 50g
動物性鮮奶油240g
蛋黃4顆
